The sous chef is the Chef when the Chef is absent from the kitchen. The sous chef is the seer of all things, taster of all mis en place, taskmaster, quality control guru, trainer of all below and herder of all above in rank. The sous chef is a therapist, dominatrix, shaman, …coach, and THE MAN! What makes a sous chef great? Loyalty. Dependability. Trustworthiness. The ability to cook your ass off – EVERY SERVICE.
