You know when you have a vision for a new project; the excitement you have, the angst, the desire to see it come to fruition? Here at Incendiary, we have those heart palpitations for every one of our barrel-aged beers. Whether it’s a naked example of a huge bourbon stout like Entropy, or a heavy adjunct stout like ODD Chocolate Malt Balls. Both equally fire up our creative juices and in the end cause several sleepless nights mulling over the details and results. This week …while our QC team was conducting final approvals on our upcoming Third Anniversary bottle releases, Spiritus Mundi with Coffee & Coconut presented a problem. We ran a couple more rounds of sensory and all agreed, this beer did not meet our standards for an Incendiary adjunct barrel-aged imperial stout. While the coconut comes through nicely at warmer temperatures, the coffee does not, and neither present well at cooler temperatures. We have an expectation on how these beers should be and believe that our customers do as well. This is where all that excitement and heart palpitations comes crashing down. So then we were tasked with a new question… what should we do with this beer? The panel unanimously agreed that the beer was excellent; in fact, the entire panel still preferred the adjunct version to the naked version. But knowing that it doesn’t meet our standards for an adjunct barrel-aged beer, what should we do? We decided we still wanted our customers to try the beer. Saturday’s 11AM release will have Spiritus Mundi bottles at 2pp/$20ea. The Coffee & Coconut version will be 2pp/$15ea. Both versions will be available on draft as well. And remember, the bottle release is only the beginning of the party!
