This alien landscape is the kräusen of our open-fermented Belgian blond, Horizon. Open fermentation is a uniquely challenging process and extra care has to be taken compared to fermentation in closed tanks, but the more shallow vessel encourages the formation of fruity esters and healthier yeast unencumbered by dead cells. It also allows the brewer to see the progress of fermentation and a rare opportunity to slow down and enjoy the process in an otherwise busy world.
