Spring House welcomes Chef Justin McMillen to Luv Luv XII. Justin Elsworth McMillen Chef Justin McMillen has always had a passion in his heart for cooking. Born in a small town in… Southern Indiana, Justin’s grandparents were always making home cooked meals and his father hunted for deer, rabbit and squirrel. When Justin started high school that’s when he enrolled in prosser’s culinary program and after high school graduation he went onto CIA in Hyde Park, NYC and earned his degree in Culinary Science. Upon graduating from CIA, Justin moved to St. Louis, MO and obtained a position at the Overlook Farm in Clarksville, MO focusing on sustainable produce and proteins. From there he moved onto Sidney Street Café as the Chef De Cuisine working alongside James Beard Award winner Kevin Nashan from 2011 to 2016. After Sidney Street Café, Justin decided to move to Healdsburg, CA to work at the brand new restaurant Single Thread Farms by Chef Kyle Connaughton. He worked from a Chef De Partie to Sous Chef within his first couple of years there. Single Thread Farms obtained 2 michelin stars and Worlds Best 91 st restaurant in the world within the first year and received 3 michelin stars and Worlds Best 71 st restaurant in the world on the second year they were open. Justin decided to move back to St. Louis, where he has joined the Niche Food Group as their Culinary Director with James Beard Award winner Gerard Craft. Justin has staged at many notable restaurants over the years some are Alinea, Le Bernardin, L’Effervescence (Tokyo) and more.
